For two nights only, Ibushi at Prefecture 48 welcomes Surry Hills wine bar 40Res for a special collaborative dinner as part of Broadsheet Dine Out. Bringing together two chefs whose careers have intertwined for more than a decade, Chef Chris Kim (Ibushi) and Chef Josh Raine (40Res) first worked together at Brisbane’s acclaimed Urbane before reuniting at Sydney’s iconic Tetsuya’s. Shaped by years of friendship, shared experience and a mutual respect for exceptional produce, the menu celebrates the craftsmanship and camaraderie forged across two of Australia’s most celebrated dining rooms.

Hosted at Ibushi, the collaboration will showcase an eight-course menu featuring signature dishes from both venues alongside a new collaborative creation. Blending Ibushi’s Japanese robata-grill approach with 40Res’ produce-driven contemporary cooking, the menu celebrates seasonal Australian ingredients, refined technique and the shared culinary history between two chefs whose journeys began side by side. A rare opportunity to experience two distinct Sydney dining destinations brought together for one special event.
