This collaboration brings together the precision of Ibushi’s Japanese open-flame robata grilling with the vibrant, bold flavours of Morena’s Nikkei and Latin American expression — two distinct fire-driven cuisines, united over a single grill.
Led by Head Chef Chris Kim of Ibushi and Executive Chef Alejandro Saravia of Morena, the collaboration is built around a shared medium: charcoal. Where Ibushi approaches the grill with control, timing, and restraint rooted in traditional robata, Morena draws on the layered, smoke-kissed heritage of Nikkei and Latin American cooking — bold, expressive, and unapologetically flavour-forward.
The result is a high-energy, seven-course sharing menu that bridges two worlds through fire. Smoke, acidity, and texture move fluidly between styles, each dish shaped by the hands and heritage behind it.
With limited seating across two nights, the experience is designed to remain intimate — close to the grill, close to the kitchen, close to the fire.
