Modern European Cuisine with Japanese Finesse – Chef Hiroshi Manaka

At FIVE, the menu is guided by the five elements of—taste, colour, technique, balance, and the senses. Surrounded by ikebana installations imported from Japan, guests experience a bold harmony between visual serenity and deeply seasonal flavours, shaped by Michelin-honed precision of Chef Hiroshi.

Garaku

Contemporary Kaiseki – Chef Derek Kim 

Led by former Tetsuya’s Head Chef Derek Kim, Garaku offers a theatrical take on modern kaiseki. Praised by Broadsheet as “exquisite and theatrical”,  this is a poetic celebration of seasonality, where each dish reflects nature’s shifting moods in an immersive, pixel-framed dining room.

Ibushi

Robata Grill – Chef Chris Kim

Ibushi channels the spirited soul of Tokyo’s fire-driven dining. As noted byGood Food, the charcoal-led robata menu of wagyu, seafood, and seasonal produce offers a smoky, soulful experience—elevated by Chef Chris Kim’s bold and elemental execution.
