Cuisine and Opening Hours

Ingredient-led
素材と旬

Nature. Provenance. Peak. Craft. Honesty.

FIVE is built on a single commitment — the ingredient at its peak. Each plate begins with what is in season and is guided by the craft that best honours it: dashi or sauce, live fire or koji, charcuterie or kombu, fermentation or raw.

Technique is never imposed. It is chosen.

Drawn from a globally trained kitchen, grounded in Japanese discipline, the experience pays homage to wabi sabi. Restraint, transience, and the quiet rhythm of nature in cycle. Vegetables, grains, seafood and protein are treated with equal importance, the room, menu and service held to the same care, supporting the ingredient at its centre.

Meet the Chef

Hiroshi Manaka

Chef Hiroshi Manaka is a revered presence in the culinary world, having achieved invaluable career milestones in Michelin-starred restaurants throughout Europe. His journey began in Italy, at the prestigious Villa Crespi and Da Vittorio, followed by an immersion into Spain’s vibrant culinary heart, where he contributed to the celebrated kitchens of Mugaritz in San Sebastian and QuiQue Dacosta in Denia. His passion for growth then took him to Agape Substance and La Biggarade in Paris, followed by a move to Sydney to work at LuMi Dining.

Most recently, after a significant tenure in Tokyo, he returned as the driving force and Head Chef behind the much-anticipated Charlotte Bar & Bistro in McMahon’s Point and hosted a pop-up residency at Azabu’s Chef’s Table. He is now set to bring his full European background experiences to life, offering an exciting Modern European dining experience at Five.

Supernature by Yuki Tsuji

Yuki Tsuji’s ‘Supernature’ explores life cycles and hyper-natural states through Ikebana-inspired animistic sculptures. Artist Yuki Tsuji, born in Shizuoka Prefecture, Japan, brings his unique vision of ‘Supernature’ to Five through his Ikebana-inspired animistic sculptures. With a master’s in architecture from Kogakuin University, Tsuji blends his architectural background with the art of ikebana, studied under Reiko Takenaka. His work explores life cycles and hyper-natural states, celebrating the intricate relationships between humans, architecture, and the natural world. Tsuji’s creations transcend traditional boundaries, fusing the vitality of plants with human creativity in a harmonious expression that resonates with Five’s ethos of culinary artistry and cultural fusion.
